酶解豆渣工艺及其在黄原胶发酵中的应用
Enzymatic hydrolysis of soybean dregs and its application in xanthan gum fermentation
【摘要】 黄原胶生产过程中的副产物豆渣仍含有大量未被利用的营养物质,造成了资源的浪费。利用单因素实验和正交实验确定蛋白回收的最佳条件:酶解温度50℃,酶解时间5 h,最佳复合酶为碱性蛋白酶和纤维素酶复配,最佳酶使用量为4%。该条件下,大豆蛋白的回收率可达90%以上。将回收的大豆蛋白用于黄原胶发酵,对黄原胶的产胶及转化率无影响,但可提高黄原胶的黏度。
【Abstract】 As a by-product of xanthan gum fermentation, bean dregs still contain a large amount of unused nutrients, resulting in a waste of resources. Single factor test and orthogonal test were used to determine the best conditions for protein recovery, which are 50 ℃ enzymolysis temperatureand 5 h enzymatic hydrolysis time. The best complex enzyme is the complex of alkaline protease and cellulose, and the optimum enzyme dosage is 4%. Under these conditions, the recovery rate of soybean protein can reach more than 90%. When the recovered soybean protein was used in xanthan gum fermentation, the yield of xanthan gum and the conversion of soybean were not affected, but the viscosity of xanthan gum was improved.
