啤酒醇酯比的影响因素与控制措施

【摘要】 醇酯比是啤酒质量的重要指标之一。为了合理控制醇酯比,减少消费者投诉"上头感",给消费者提供良好的感官享受,分析醇酯比的影响因素,包括酵母菌种、酵母性能、麦汁组分、充氧条件、满罐酵母数、发酵压力与温度等;采取加强菌种管理、优化麦汁组分、控制发酵条件及发挥协同作用等措施,促进啤酒醇酯比的合理性。

【Abstract】 The alcohol-ester ratio is one of the important indicators of beer quality. In order to control the fusel alcohol ester ratio reasonably, reduce consumers’ complaints and bring good sensory enjoyment to consumers, the influencing factors of alcohol ester ratio were analyzed, including yeast species, yeast performance, wort components, oxygenation conditions, number of full cans of yeast, fermentation pressure and temperature. In order to improve the rationality of alcohol ester ratio of beer, measures such as strengthening strain management, optimizing wort components, controlling fermentation conditions and exerting synergistic effect were adopted. Beer alcohol ester ratio can be effectively controlled.
